THE Guac.

The best guacamole recipe ever. Easy and Authentic

Us Orchards lived in southern California for 15 years so we know a good guac when we see one. This has been the go-to recipe from the 949 since the 90’s

The Must Haves:

  • 3 ripe avos (you know where from..)

  • 1/2 a yellow onion

  • 1 clove of minced garlic

  • 6 slices of pickled jalapeños (fresh is best but good luck finding in nz)

  • Decent handful of coriander

  • 1-2 limes depending on how juicy they are

  • 1 tomato

  • Salt

Non-essential, but big ticks if you’ve got one!

  • A molcajete or large mortar and pestle

Method:

If you have a molcajete or large mortar and pestle, gold star to you! If not, no worries just chop the following up super fine.

Chop the onion and rinse under cold water (this takes the bite out of the onion when used raw) add half (save the other half for later) into the molcajete along with the jalapenos, minced garlic, half the chopped coriander, and a good sprinkling of salt. Grind until the oils are released and a paste is made.

Add your avos and mash to combine.

Chop your tomatoes and remove the watery seeds, they aren’t welcome here.

Add the chopped tomatoes, remaining chopped coriander and onions, lime juice and mix with a spoon. Add more salt to taste if needed.
